Is it possible, in the infograph circular watch face, to only have one color, similar to the gold watch apple is showing on the web site, that has a goldish color for all complications, and fonts.

If that is what they mean, that is simply because those complications font color is orange. It is not a setting; it is just the default color Apple gave those complications.

Someone on r/applewatch posted turning on "greyscale mode" in the Watch accessibility settings on their iPhone to remove all of the colours. Looks pretty good, but then the whole OS is greyscale...

I just tried setting it up like on the pic. Is there any logic to whether a world time zone is white or black? Also I added London which appears with a white background during customisation and in the preview - butbwhen activsting it, it’s black

White background means it’s day time. Black means it’s after the sunset.
