I copy charts from Excel or pages sheets often, to paste them into an email in mail.app.

Mail.app gives me no possibbility, to have them with a certain style (borders, formating of fields, etc).

How can I change the format of these pasted charts (at least borders are necessary)?

There is no inspector in mail.app for formatting the needed charts.
 
You could save the formatted charts in pdf format and then attach them.

No option, as the receiver has to use the chart on a Windows PC after initial reading in the mail.

The best way would be, that Apple implements the Inspector, as in numbers (MS outlook on windows has such feature - chart formatting within the mail program - very clumsy, but working).
