Evernote still has: notebooks, notebook stacks, tags, more robust search, image and PDF OCR for text search, web clipping, cross-platform sync, font options, ability to attach any file, and a bunch of other features that I don't use, but maybe others do. :)

I really like Notes for really quick text items, and especially love the little sketch thing, but otherwise I'm sticking to Evernote as well.
 
UPDATE

As I was upgrading my fiancee's Notes app after her iOS upgrade, I noticed in the "Learn More" section right before you select upgrade that they list compatible devices for the sketching tools. I don't remember them all offhand, but I do know my iPad 3rd Gen was not listed there.

Another case of Apple Fragmentation and them unnecessarily limiting a device for no reason other than to push to an upgrade. It's also exactly why I've chosen NOT to upgrade my iPad because I refuse to get caught in Apple's obsolescence cycle.

That said, the update has made my iPad much snappier. It was super sluggish on 8, and now has sprung back to life. Sucks that I'm being denied features that could make it more useful, but I'll get what I can out of it and when it dies I'll be done with iPads.

Am I missing something or is the sketch feature not available on the iPad mini 1st gen? If so that's really unfortunate.
Same for my iPad 3rd Gen. Weird because the 'Paper' app works just fine on my iPad, so it's not a hardware issue.
Mine too, no sketch tools.

The tools weren't popping up for me either, so I tried restarting my ipad [mini 2] and changing folders (to "on my ipad"). Not sure if restarting did anything, but the tools are now available to me (but only on that folder).

Hope this helps, although I have heard not all devices are supported.
 
I see they still haven't fixed the worst usability problem yet: the text (font and color choices).

Seriously, Jony Ive, did you not do ANY readability research at all? YELLOW text on a WHITE background??

Add to that, the continued use of text as "buttons". Screw flat design and every one of its mindless supporters screaming "clean!!!!!"

The bright yellow colored font for the app itself? Have you tried:

For font: Settings app>general>accessibility>increase contrast> darken colors "on"

For buttons: Settings app>general>accessibility> button shapes "on"

#clean!!!!!

Thanks, didn't work for me unfortunately, but my iPad mini works a lot better with 9. It was getting slow as with 8. I wish mail would quicken up though, takes ages to load now.
 
you're able to sort notes into folders in iOS 9 and EL Capitan. As far as tags go, I find that searching within Notes Finds everything I need.

but if the tags are the same as finder tags it could improve searching for all docs for X. further melding the two sides
 
Yeah my second generation Ipad Retina doesn't have the drawing tools either. Bummer. Seems like it should be possible, every other app can do sketch, etc.
 
Apple is no longer what it used be things work and sometimes don't. I have alson installed El Cap. on my Air No big deal I have to say. Of course always better than wondoze
