Again, it is just a blown up version of the phone app and not at all optimized for the big Plus screen. I really hope we get some sort of landscape mode or some other features that utilize the added real estate more.

And why is it still not possible to scroll through full screen photos? No I need to go back to the overview, tap another photo and view that. And what about zooming in??

Actually, it's optimized. The version that existed before today was a blown up version of the app. The status bar is now consistent with the rest of the operating system and the text is scaled properly.

Will we see a landscape mode in the future? Unlikely. Instagram is at its core a mobile app, emphasized by the fact that you cannot upload photos from computers or tablets, only from a smartphone. Do I wish I could zoom in on some photos? Yes; but that's not what Instagram is about.

It's not just Instagram either. There are plenty of apps out there that will never take full advantage of the screen real estate the 6 Plus has, simply due to diminishing returns as well as their intended purpose. Instagram isn't about having a ton of features, it's just an app for sharing photos very quickly.
