I have a clone of my Macbook HD (Catalina) on an external drive that I made with Carbon Copy Cloner.

I want to do a clean install of Big Sur on my Macbook.

Can I do that using the CCC clone on my external drive?

I would copy the Big Sur installer on to the CCC external drive, start my Macbook from the external drive and then open the Big Sur installer.

Will I be able to install Big Sur on my Macbook (clean install) doing that?

I don't see why you wouldn't be able to, although, I am not that familiar with Big Sur installers. If it is like the older MacOS installers, yes you can.
