This is a huge feature to me. I'm guessing you still need to log in with TouchID. But in the demo, Craig lifts the screen and we instantly see the desktop. I guess he had "require password" turned off. Anything more to expect with this?

I'd guess probably "Power Nap" is constant now.
So instead of opening the MacBook to find that notifications are rushing in, you'll just see that they are already there in the dock icons.
Also they didn't outright say it but you can see the specs when you order: WIFI 6!

Maybe I am going crazy, but wasn't "Instant On" an advertised feature like a decade ago too?
Yes, that was one of the announced features for OS X Lion that they could bring back to the Mac from iPad, at the Mac Event in Late 2010.
Sorry for the confusion, but aren't MacBooks already 'instant' on? Based on the demo Craig showed, my MacBook Pro [2020] also turns on right when I lift the screen...
My guess is that Apple Silicon Macs do not go to sleep when you close the lid (the CPU does not power off, exactly like it does not power off when you lock iPhones and iPads by pressing the sleep/wake button) so "waking" up the Mac is faster when you open the lid again.
All modern laptops turn on within a few seconds of opening the lid; I noticed over time that even my 2020 MBP would sometimes take a few seconds before turning on the screen and logging me into the desktop. My hope is the new AS laptops will eliminate this delay.
One thing I noticed is that Apple isn't advertising the "Standby time" for the new AS MacBooks. Previous models were advertised as having "Up to 30 days of standby time". I wonder if this Instant on" feature will be eating battery life and reduce the amount of standby time...
You can adjust to keep "instant" on for longer but at the expense of battery life. You have "instant" for so long, I forget the default time then it goes into standby mode. These settings are in command prompt under pmset -g
If you are in standby then the wake could be around 3-4 seconds.
