Internet Sharing Greyed Out

Anyone know how I can access these options to make Internet Sharing work?

Well it is currently on. To configure it, uncheck the box next to Internet Sharing on the left which will turn it off. You will now be able to reconfigure Internet Sharing. Check the box again and it is re-enabled.
