I'm midway through setting up my new iPhone 7 and it's insisted I upgrade to iOS 10.0.1.

Haven't seen this mentioned anywhere else.

10.0.1 was the version of iOS 10 that was released to the public. Some iPhone 7 and 7+ devices received 10.0 and will need to update to 10.0.1.
