I don't know, in this case I would say the carriers made their own beds on this by offering unlimited data again.I think this is more of a concession to the carriers (similar to those download size limits for things like apps). Any LTE phone might have enough bandwidth but that doesn't mean that every LTE tower/cell has no bandwidth limits serving all phones that connect to them. With 5G, the bandwidth of each tower/cell is much higher.
It's still an artificial restriction but not one primarily designed to cell new phones but to keep the carriers 'promoting' iPhones.
Is iMessage an industry norm outside of the US?Just a random comment.. I can't even imagine all of the servers placed around the world to handle so many iMessages, video calls, voip calls each minute of the day. Yet.. Apple made iMessage so reliable, secure and almost an industry norm.

there is no planned obsolescence. apple throttled to prevent shutdowns due to aging batteries. end of story.

Sure, but how they got into this dilemma doesn’t change the fact that it is the carriers that have lobbied Apple (and other vendors) to put in those limits, from app sizes over tethering restrictions to video chat limitations. No it is very necessary. In more dense populated areas, when everyone tries to connect to a tower, everyone gets slowed down. It only has so much bandwidth. If it were allowed it would cause lower quality service for everyone much faster. This is why providers are pushing forward on 5G because it can handle dealing out more bandwidth per customer. Also, most video conferencing applications compress and deliver 720p even on high speed WiFiWell, you're probably right, but that's still ridiculous.
Not only do we have data caps and other limitations, but we also get limited on what we do with our limited data (we actually pay for).
Also: All the other video chat and streaming softwares probably don't care about that.

However, if I use more than 22GB in a month, my data speeds get throttled down to 3G levels (not that 3G still isn't plenty for a phone) for the rest of the month. Pretty sure all other US carriers are similar in this regard.
