Same here. My iPhone X updated last week right when my new iPad Pro was delivered with a required update to 14 during setup. Fortunately I still have my old, original iPad Pro that never automatically updated since I’ve owned it and am still on 13.9.

Maybe Apple wants to get out of the mobile email app business and is ever so subtly converting us to other email clients; I opened Outlook on my phone for the very first time today.

I have the exact same problem. My shared mailboxes work fine on macOS Big Sur but not on any iOS units. Have read a lot of other places that Microsoft says it's Apple's problem and vice versa...o_O

Do you happen to know if any other Mail Apps support Shared mailboxes out-the-box other than Outlook?

Never used it but you can setup a shared mailbox (inbox) with stock iOS Mail.
You need to select Other for the type and manually enter the info.

Setting up a Shared Mailbox on your iOS device (iPhone, iPad)
  1. Go to Settings > Mail > Add account (in iOS 11 go to Settings > Accounts & Passwords > Add account).
  2. Select Other from the list of types.
  3. Tap Add Mail Account.
  4. 4.Enter a name for the mail account (e.g. Shared Mailbox)
  5. 5.Enter the email address of the shared mailbox.

Yup, this is more-or-less what I've done on the macOS apple mail app, but haven't tested it out on iOS yet
