I'm hoping that High Sierra will back up iOS 16 devices - so I can get one last year out of my ol' 2011 MBPro before moving to a new laptop.
Keep us posted please. I hope the same too - can you maybe update to Mojave? Maybe that macOS will have more chance ;~}. I've found it to be stable on a 2012 Mac. Just a few issues with Apple messages being slow which I guess is connected with Apple's syncing strategies. I've never seen a compatibility page for iOS at Apple, sadly. So someone has to try it and possibly fail! Or borrow an updated phone and try that maybe.
This list is somewhat helpful https://en.wikipedia.org/wiki/History_of_iTunes#Devices but as we know that iTunes 12.8.3.1 supports iOS 15 it's perhaps not exactly accurate.

I'm just not going to put an officially-unsupported version of MacOS on my ol' geezer, as tempting as it may be, because I depend on it!
