I have an iPhone SE 1st gen, which is basically the same phone as a 6s, internally. It works perfectly fine with iOS 15, so something else must be amiss with yours. I would recommend that you restore your phone to its factory settings, see instructions here. Please make a backup first. Good luck.
I have an SE 16 with a new battery and I’m glad that I don’t need to use it because although it works and it is workable, it’s not pleasant and less so after updating it from 14 to 15.
Also, OP has a 6s+, the SE was always the fastest of the bunch because it had the same chip but fewer pixels to push, the + has the most and has always been slower than both, even if just marginally, but it shows with time.
 
Before you replace the battery, bear in mind that iOS 16 probably won't be available for the 6S & 6S Plus. On the other hand, I had a 6S and Apple charged just $49 (IIRC) to replace its battery when I checked awhile back, so you might find acceptable the cost of replacing the battery in order to use your 6S Plus for several more months.

On the third hand (heh), if you trade in your 6S Plus now instead of when the iPhone 14 series debuts, you'll get (slightly?) more for it.
 
This reminds me of iOS 7 on my iPad 2. Turned an amazing device into something embarrassing.

edit: I do want to add, though, that I recently used a 6s (regular sized) with iOS 15 and was surprised with how well it performed. It had a few hiccups but I found it to be a pretty good user experience. The battery life is trash, but that’s a fault of the battery. I don’t know how much the OS contributed to that. I just wanted to add this and say that mayyybe there’s a problem somewhere? I’d try a fresh install if you can (like a factory reset) and see if the issues persist.

You hold on your hands a device that is still officially supported, a device older than any officially supported Android device by far, and you STILL complain?

This device was released late 2015 - it's had 6 years of updates.

And yet you complain of "planned sabotage"

I’ve had multiple A9 iPhones with iOS 15. Not all were mine but I got to use them for replacements while my 11P was in for a replacement and I couldn’t use my own SE 16 as I handed it to my sister.
I wouldn’t consider that lucky, either. As I said before, iOS 15 isn’t pleasant on A9 iPhones.
 
The 6S Plus is pushing a significantly higher number of pixels, both virtual and physical, than the 6S, plus, due to a quirk with the larger model, downsampling is occurring. The SE's numbers are even smaller than the 6S.

Trying to compare the two is not quite apples-to-apples, never mind vs. the SE.

Those with a 6S Plus running 15 are the ones who can provide a truer picture, so to speak.

Oh geez I was planning on trying to update my 6S to iOS 15.4.1. I had initially updated it to 15.0 and went back to 14.8 because 15.0 was very sluggish. I was hoping things have improved. I guess that’s not the case?

Things have improved, but not enough to expect the 6s to run as good as it does on 14.

Yeah. The annoying thing is my carrier (t-mobile) doesn’t seem to be offering carrier settings updates anymore. They advised me I had to update to 15 to get the newest versions for the best network compatibility. :-(
