iOS 5.1 Upgrade - Guidance Needed!

So I'm going to upgrade to 5.1 from JB 5.0.1 and I need some help here. I'll be looking to setup my 4S as a new iPhone and restoring all of its data so here's my question.

Should I update to 5.1 and then follow the steps here (http://support.apple.com/kb/HT4137) to Erase and Setup my 4S as a new iPhone?

Or

Should I Ease, Setup as new and then update to 5.1?

Just do the update over the jailbreak. If you encounter any problems, you can always restore after the update if necessary.
