I have noticed "Define" feature (built-in-dictionary) is missing in iOS 5 Beta 7.
It was there until iOS 5 Beta 4 but it is missing then on-wards.

Has anyone noticed this? it was quite useful than using dictionary app.

Still there on my phone, and has been in every beta I've run (4,5,6,7)
 
Im in the same boat as the OP. define is no longer system wide for me. It disappeared in beta 5 or 6. Running in an iPad 1 in case that matters.

Still have define in iphone and ipad.

Did OTA on both.
 
Doing a full restore fixed it for me. I then restored from backup and it is still there..

Previously I did an OTA from beta 6 to 7.

I did full restore on beta 6 but OTA for beta 7. Anyone having problem with similar update process?
