Ok, updated my iPad 2 a few minutes ago and got first problem. YouTube app is gone. I don't want to wipe all my data just to get it back. Any ideas?

No, it's just tons of people are trying to access the update server at once. This is nothing new and even happened when updating via iTunes in the past.

Turn wifi off, check for the update and it will appear. Then turn wifi back on.

Edit: Ehh... Wifi only iPad... don't know what to tell you. Sorry!
