iOS 7: All The Little Things! (Featuring iOS 7.1)

There use to be colander dates you could scroll to on the bottom. For example: I use to be able to scroll to ,let's say, the 25th of September and create a list of 'to do's' for that day. Now I have to individually choose a date for each task I mark down.

You can get to a calendar-like list of scheduled items, but that seems to be the only thing that's sort of related to something like that. If you pull down a little on the reminder list name (at the top of the screen) you'll get a search box and an alarm clock icon next to it on the right, and if you tap on that icon you will get a scheduled list of reminders separated by different dates--it's not really in a calendar "cell" format, but it's a chronological list of scheduled reminders.

That said, yeah, you can't really go to a particular date and create a reminder there it would seem.

Why would they have gotten rid of that feature? It was very useful

Hard to say. Lot of things changed or were removed, and at least some of them don't really have a good reason as to why they would be removed (and they provided actual useful functionality). Just how redesign/updates of things goes sometimes (if not often).
 
Is this new? Never noticed it last time I was on iOS 7 which was Beta 4, so probably it was added on Beta 5 or Beta 6.

OS X uses up all the memory it can get, it might not have been a problem. If it were, it's more likely it had something to do with a buggy app that wasn't backgrounding correctly.

Incorrect: They may not use CPU, but they still use RAM. Safari for example can only manage 2 tabs on my iPod Touch 4G when I have lots of other apps open, if I close them then it can have about 4 open without needing to reload them each time.

My advice it to just reboot your phone every week or two, much easier than micromanaging running apps, and for most users it shouldn't matter, power users will see benefit from closing things however.
 
Has anyone tried to swap to the left in a message conversation? It will show the time when each message is posted.

Yes, it's very hard to find this little trick. I found it totally by accident. Now I am wondering if this is new in iOS 7.

It's new for iOS 7, has been there since beta 2.
 
iTunes Radio is gone and yes I am on wifi and yes I checked if it was in the "More" section

Edit: Closed and reopened the app and it's back

Just noticed the new 'Coverflow' on my 4s music app ... really, really nice and very, very responsive. Way better than old scrolling tile interface.
