it's switched on on mine, says "ambient noise cancellation reduces noise on phone calls in loud environments". Pretty sure this is not a new feature, only that it can now be turned on and off

Turns out it was grayed out because I had hearing aid mode enabled.

What would be the benefit of turning this off?

Turning it off would disable the second microphone on your iPhone for noise cancellation meaning people on the other end of the phone will be able to hear background noise which can be pretty bothersome.
