I'm saying if it's just for streaming why do you need something so powerful (and expensive) when even something so old as an A5 device could do the same job?
TouchID/ApplePay and maybe a larger screen to watch those streamed videos, etc?

Because it not the same thing. Streaming or using something from the cloud primarily relates to where something is stored, not what it is, how it performs, how it's used, etc.
 
pretty much confirms that Apple will stick with 16GB moving forward.
I think it more confirms that Apple is not happy with the slow adoption rate of iOS 8 and found that "not enough space to install it" was one of the reasons why people were not upgrading (probably somewhere below "heard there was some bugs in it"). This thing helps them have more of the installed base on the latest iOS (remember those beautiful adoption rates they show off each WWDC).

Apple already does, and at lower prices (for the 64 and 128 gb variants). Why is it Apple's fault when people are getting phones with insufficient space again?

You know 16 gb phones won't be enough for your needs, you still get one anyways, and then turn around and complain when you do run out of storage? Huh?!?

So what cloud based apps are there that are worth spending roughly £1000 more on to justify the performance improvements?

Do car companies still sell cars with 5 gallon tanks? Are Big Gulps still 64oz? Things change and 16GB is embarrassingly out of date.
 
But the REAL question is does it put the data back for the app(s) or just reinstall the app?

No. The real question is if it even bothers removing the app's data. Many apps use hundreds of MB for the app bot only hundreds of KB for the app's data. This trick could be selectively applied to only those apps to clear up huge amounts of space temporarily, and I'd be surprised if this wasn't what Apple was doing.
 
Message should say:

"There is not enough space to install our new OS, next time do not be cheap and please spend the extra $400 for an extra 16gb of storage because we really like money and the extra $399.90 of absolute pure profit we generate on top of the base model just to add an extra $0.10 worth of flash memory is used to figure out how to make our next OS even bigger."

Did anyone else find that this feature didn't work properly? When I OTAed, it left the deleted apps in a state where they needed to be downloaded again (still on the springboard/home screen) and upon tapping them, they wouldn't redownload until removed from the springboard/home screen and redownloaded manually. I recognize that this is a beta and that such quirks, especially this early in the game are to be expected, if not part of the fun. However, I'm wanting to know if I'm the only one who experienced that. For the sake of further info, I'm running the beta on a black 16GB third generation iPad with Verizon's service (iPad3,2 if you will).

This happened to me as well. I came here to post the same question.

I don't know if it was a coincidence or not, but the deleted apps were ones that I wouldn't expect to have any important saved data associated with them. The deleted apps on my iPhone were banking apps or streaming video apps, like WatchESPN; don't know what they would need to save.
