At my job, we are working on a graphic design concept for an app we'd like to have developed.

Do anyone know the max amount of characters allowed for a home screen icon used to launch an app?

It depends, it will ellipses if you get it too long.

The reason it depends is that all letters are not equally sized in the font that they use so you can fit more i's than m's
 
Can you not just create a web clip on the home screen and give it a name of your choosing to test it out?
 
So I save one webpage it works.

I try another and I get ... in the middle. any ideas?

The "..." is called an elipsis. That appears when the name of the app is longer than what can be shown so iOS condenses it in the middle using an elipsis.
 
Either rename it or use a smaller type size. You can also kern the lettering to "crowd" the letters together - if you have a tech graphics program.
