Got an iPhone replacement on iOS 12.0

I have blobs for 12.0.1. Can I upgrade to 12.0.1?

    No, you cannot load 12.0.1
Apple has stopped signing that version.
Update will take you to whatever is current. Today, that would be iOS 12.1

What’s the point of blobs then?

    ?
    Same as usual.
You use blobs to reinstall iOS (that's the point)
You can only use blobs while they are signed.
You can no longer use blobs when Apple removes the signing for that particular version, at which time that blob has no value at all. And, that becomes the new point of that blob. Unsigned = not useful.
