iOS4 Manual Backup Method Issues

So I've given up on trying to do the update 'normally', and am trying the manual backup-restore method, but sadly the backup I'm trying manually is also getting stuck halfway through the process and I've let it sit for about 3 hours with no progression. I've also tried deleting videos/pictures/texts, but it still will not go past halfway.

Please help.
