iOS5 features not in (that I thought would be)

    I'm loving iOS5 so far, a nice step up from 4.

    But coming from a Jailbroken phone I was hoping Apple would have ported over other great unauthorized apps (like they did with notifications).

    1) Mark All (Mail) - they added "Mark" but where is the mark all option? That is email 101. I don't understand. I used that jb app all the time. I get about 20 new emails in one shot during the day, I want to browse the headers, read what is important and just mark the rest for either deletion or read status.
    Nope, Apple wants me to stick my finger on every title and manually check it.
    Maybe I am missing something and that functionality is there?

    2) Basic speech to text. I guess they are leaving it all to Siri and the iPhone 4s but how about basic speech to text in the messaging app?
    I don't need to know the best Mexican restaurant, I just want to be able to text while driving safely.

    3) Profiles. I have been confounded about this since the 3G. How about an easy button that lets me set up my phone for the environment I am in.
    In the car - wifi off, bluetooth on
    Movies - vibration only
    Home - bluetooth off, wifi on
    and on and on.

    2 - you will be able to send a text using voice.

    What I really wanted to see is a quick way (like two taps) for turning off wifi, 3G, airplane mode, bluetooth, etc. etc. like SBSettings. That was my #1 reason for jailbreaking.
