Is there a way that I can back up all of my jailbroken stuff: Cydia packages, custom icons etc... for when the next iOS 5 beta comes so I can upgrade to that while preserving my jailbroken data?

I hope you understand my question.

It's probably too early to tell. I would assume you wouldn't be able to back up stuff from cydia, since apple would probably not allow such files to be backed up to their servers. Again, this is just my speculation, so I really don't know. We'll probably find out the answer in the coming weeks/ months.

Use xBackup. I used it. There is no Jailbreak that works with iOS 5 yet. If you Jailbreak, nothing from Cydia works. So you just have a Cydia icon on your homescreen. I am a Beta tester and have tried to Jailbreak it already. Redsn0w has a jailbreak fro it and it is the same thing. Wait to Jailbreak.
