I've come a blank on this, i just can't remember what happened last year.

Is it possible to go from a tethered JB without the restore etc. to untethered?
My conscience tells me that i'd need to restore, but i thought i'd double check.
 
This might be a dumb question, but is there currently an untethered jailbreak for official 5.0?

My guess is no, but the hacks section seems to be poppin' with iOS5 threads so I wasn't sure
 
Yes and No.

The betas have been jailbroken long ago. But today's release has not.
iOS 5 has been jailbroken already.
It's still a tethered jailbreak though for the newer 3GS and iPhone 4.
Older 3GS phones have an untethered jailbreak for iOS5.

Yes, there is possibility to go from tethered jailbreak to untethered jailbreak. As you were remember, back when 4.2.1 was tethered jailbreak with redsn0w. Greenpois0n came out. All we need to go to run greenpois0n over it and it the untethered jailbreak.

1. Download the version of iOS 5 Beta that’s appropriate for your device. In order to do this legally you must have a developer account with Apple.

2. Update or restore your device to iOS 5 using iTunes 10.5 Beta, like you would if you weren’t applying the jailbreak. Don’t worry, Redsn0w will still be able to break into it.

3. Download the latest Redsn0w. Point Redsn0w to the iOS 5 Beta firmware as shown below:

If that the case, how do you explain members in this forums have successful jailbreak OS5? However, it is tethered jailbreak though.

You said it was the official jailbreak. It obviously is not. That it works using the betas is an entire different thing and a warning should be given. You can't call it what it is not.

You get your point. Let's see if Redmondpie and iclarified update their tutorial of jailbreaking OS5 with today official release.
