So I liked the iPad for showing my photography before, but if I understand the new retina display, my HD video work would actually display in HD right?

Doh, my bad. No it is not the same. The iPad(3) has "only" 2048x1536 pixels. Still good enough for 1080p though....
Transfer your HD videos and photos to the iPad and they will play back in their native resolution or up to 2048x1536.
