As of today, the Fifth Avenue NYC store has all three iPad models very well stocked, as well as a lot of Apple cases and other cases available to purchase.

I'm pretty sure they're open. At least I know the Michigan Ave store is.

The stores around Chicago are closed today for the holiday.

Not only are they open today, but it was extremely packed and there was a line to get in the store which moved very quickly. Also, they were very well organized and had plenty of staff on hand.
