So I have had a jailbroken iPhone several times throughout the years but have never explored the iPad jailbreak. The main reason I would want to jailbreak is to allow filesystem access and open saved docs into existing apps.

Additionally I wold love to be able to use a flash drive with the camer connection kit and move files to and from the iPad. Are there cydia apps, or ways to accomplish this?
 
Have a look at iFile on Cydia.

I 2nd this. iFile is a very capable file manager app. I'm very impressed with all the function they were able to build into it. Probably would blow away any file manager app Apple could ever release. It is technically a paid app now but it still lets me use it without paying. It just nags you when you first open it if it isn't registered. I'll eventually pay for it because I would really hate for this app to disappear from Cydia due to lack of monetary support.
 
I agree, iFile and the Camera connection kit fill the only void, for me, in the iPad. USB file access. It is brilliant
