Does anyone know if the iPad Mini 6 is compatible with USB-C SSD’s? Can apps from the App Store be installed on USB-C SSD’s or do they have be installed on the internal storage?

Yes it can connect to SSDs, but no you can’t install apps on external storage, only on the device itself.

It certainly should support SSDs. But no, apps must be internal.
