As the title states. I know the iPP is two years old right now but have seen it run smoothly still. I'm willing to get it over the iPad Air due to ProMotion, quad speakers and 4 GB of RAM. Do you think the A10X will have any issues at least three years from now? It should follow the iPhone 7 lineup...
 
Apple still uses the plain Apple A10 chipset with 3GB RAM on their 2019 iPad 10.2" (probably the iPad of choice in sectors with mass desployment like education).

I don't think the Pro 10.5 with A10X will have performance related issues owing to the CPU for the next three years (probably even 4-5).
 
The fact that they’re still selling them refurbished on the apple store tells me that they’re still expecting to support it for another 4 years or so (yes, I know this is not a scientific guarantee).

That's definitely no guarantee. Apple is still selling old iPod Touch models which can't use iOS 13.

The iPod touch they're selling has an A10 chip. Why can't it use iOS 13?

I did not think about this. When factoring in the regular iPad, the Pro seems like a much better decision on my part.
