So, this is the first time I'm having this problem. While it's connected to my 5GHz wifi, I'm barely getting any performance out of it. If I switch it back to the 2.4GHz, it's doing just fine. All my other devices on the 5Ghz are doing just fine, this laptop for instance.

I've restarted it, but not sure what else I can do at this point. Any suggestions?

If you haven't already, a couple of things worth trying as they're easy --

Reboot your router
Reset and rebuild your network settings on your iPad

Edit - there are a couple of apps that will display the WiFi strength your iPad is seeing: Dr. WiFi & Airport Utility.
 
I appreciate the advice. I went ahead and reset the router. I had already restarted it, and reset the network settings on the iPad. We're all good now.
 
I have a 2.4Ghz and 5Ghz network at home. The powerline extender is in the lounge and 5Ghz works perfectly there. When we are upstairs the 2.4Ghz is much reliable. So keep distance in mind.

To be honest. I can't say I notice a big difference between the two for browsing and YouTube etc.

Yeah, 5GHz doesn’t have as good as range and has a much harder time going through walls than 2.4GHz. You won’t see much in terms of speed unless you’re downloading something/streaming games and stuff that needs the speed. I have a 1 gigabit connection and I get around 80Mbps DL/80Mbps UL on 2.4GHz and get around 350Mbps DL/450Mbps UL on 5GHz on my iPad Pro.
 
That's an insanely fast internet connection you have. What do you achieve through LAN on your other devices?
Yeah, it’s nice to have for sure! On my main desktop I usually get around 800-900 Mbps DL and 900-950 Mbps UL. Kind of over kill as most download servers don’t go that fast, but who’s complaing hah.
