I really want the gold one, but I think I am going with space gray. ONLY because the bezel around the screen is black. Not sure I could get used to the white bezel. I've had all black/space gray Apple devices since the iPhone 3G. My wife has a silver iPad Air and the white bezel doesn't bother her at all. To each his/her own.
Instead of asking which one you should get, how about just asking what color people got for themselves? 
I was gonna get black (again) but decided to get white this time, not just for a change, but also to eliminate the fingerprints on the bezel problem.

really? another color poll? all these amount to is "here is a list of random people typing the name of one of the 3 colors of an iPad, or clicking on one of them in a poll." why would you base your purchase on the regurgitation of 3 known options?

Do you have Apple Pencil and the Smart Keyboard? If so can you reply with a picture of the ipad in type mode with the Pencil next to it?

I wanted gold, but had to settle for the space gray. It's in a case, though, so I'm not too disappointed.
Polls like this reveal why it's easy for Apple to charge such high prices.

Or it's just a colour to choose and some people have no preference. I got a silver/white one because it wouldn't show fingerprints half as much as the black and also looks sexy/thinner to me. Each to their own. Nobody is being programmed
I'm choosing the black bezel in the end, even though I love the gold. I considered the white bezel because I though it would blend into the white writing pages I'm usually using, but the Elmer's Paste color of the white bezel is not a great match for the cool grey-white background of most screens I look at. Thus the Space Gray.
I think you might be reading too much into the OP's question.
Apple are not the only tech company to produce multiple coloured devices.
People are not choosing the iPad BECAUSE it comes in different colours, they're choosing it and then deciding whether to get the black or the white one. The only time I recall apple charging more for a particular colour was the old poly MacBooks, where the black was more expensive than the White. Otherwise, it's just a choice that people make once they've decided to buy a particular device.
Everyone who buys an IPP has to decide which colour to purchase, because you can't not make a decision. There are benefits to the black (less distracting for films) and to the white (feels more natural as an extension of 'paper').
Of all the questions to get worked up about, this seems to be a fairly trivial one.
