My work uses windows computers, I've been able to access our system on my Microsoft Surface using Forticlient and using a VPN. Will this be possible on the iPad Pro? Will it have the same functionality?

Yes. I have been connected to my work computer through FortiClientVPN for a year+ now
you can set up the vpn through the FortiClientVPN app + MSFT remote desktop.
keep in mind that the iPad Pro does not fully support external monitor or dual monitor. You will have to work off the 12.9 screen
