My favorite app for doing this in school, Noterize, was bought by nuance and removed from the app store so bollocks to that. I really liked that app too.

You can still get it, but its called Paperport now, rebranding of the same app since Nuance bought it out.
 
You wont see anyone in graduate school using an ipad to take notes. In pharmacy school, everyone is 'required' to have a laptop. You need to multi-task and that cannot be done on ipad.

I am in graduate school and I do use my iPad for note taking. Used to use my MacBook air but preferred the portability of the iPad and sold the MBA.

iPad, using Pages and a smart cover works really really well for taking notes in a lecture.

I have a friend who experimented using an iPad only just for taking notes, last semester. He told me that it was fun to use, but that he ended up going back to his laptop, as he can type faster.

Personally, I have a MacBook Air which works great for note taking. It does weigh more (only by a little), but I guess I'm just a creature of habit.

Evernote, i think everybody knows. Beesy is a smart note taking app. You can take notes and also record key moment thanks to timeshifting feature. You can take note on the audio file. It's really interesting.
After taking notes you can manage them . I think it's a note taking app for business but try it

I think you can take notes on iPad but if it is like someone is dictating to you, the speed is lost, you just cant match up to the speed of writing to match the rate at which the person is dictating. It is slow, lousy but works !

They are plenty of apps to take notes on your ipad but very few are really productivity apps able to generate structured reports. Writing down meeting minutes or meeting reports is a painful process which is time consuming.

iTakeNotes has been released on the appstore recently: the principle is to formalize notes during the meeting and get a meeting report as soon as the meeting is over in pdf and in .txt if you want to review the format. They provide audio recording and camera so as not to lose any data during the meeting. The app exists in english and french and a spanish version is on its way, it is a very productive tool for those who spent desperate time formalizing their meeting notes.
