and in the morning it was at 70% once and 80% today and the battery icon was still green while connected too the cable
Unplug and plug it back then is ok. Could be the iPhone or the brick not enough ?

I've charged my 12 Pro with the 5w adapter and old USB A to Lightning cable - no problems. I also am using a 5w Anker wireless charger (even slower) - no problems.
I prefer to use my 18W USB C to Lightning setup as it charges a bit faster - but my phone spends most of its time between 85-100% anyway so really doesn't matter. The phone asks for less and less power after you pass the 85% charge level. Past 90% the phone can ask for under a watt of power sometimes. Any 5w charger should be able to supply that with ease.
Now for a 11 Pro Max or a 12 Pro Max - the 5w charger is underpowered imo. It gets REALLY hot with anything under 80%. This is why Apple used to package a 18W with those.
For your situation - I'd use process of elimination. Try a higher wattage/different charger with the same cable - does it do same thing? Try a different cable with same charging brick - does it do same thing? Try same charger with a different cable - does it behave differently? --- That's probably what I'd do.
I've had Apple cables fail in the past (usually the ones in my car that get used a lot by my passengers) - they just stop charging cuz of so much use. That's why I usually get Anker braided cables - they tend to last a lot longer.
