I’ve found something weird in my iPhone 12 Pro. And you can try it as well.
Open up a black image. I took a screenshot of the safari new tab page in dark mode to achieve the same.
Now set brightness to low or even 20-30% and you’ll see it’s grey.

but if you do max brightness. It’s black. As if the screen is off.
This is done best in a dark room.
What’s fascinating is this. If you set it at anything above min brightness they grey goes black in a matter of few seconds.

Like it’s grey for a bit and then it realizes its an Oled and can turn off for black.
i did not notice this with my 11 pro to the best of my memory.
 
Every iPhone 12 have this issue some people are just blind ... i spoke to 6 people they “don’t have it” then i show then and suddenly “wow yeah you were right i never notice”

My wallpaper is black on my Mini. Not a hint of gray at any brightness. Same with viewing a full black photo.
