When I go to my Apple App Store it says "get ready now so you can speed through checkout when pre-order begins. When i click on start now and I select the mini, it does not allow me to put it in the bag? So how do you speed through then?

Are you enrolled in the IUP or have an Apple card? I believe you either need to be or you have to enroll and get approved before you can qualify for the pre-order.. I only was able to get it to work if I applied for the monthly payment through Apple(not IUP) and then needed to apply for credit from Citizen One.. 0% for 24 months
Only thing you can do is choose the one you want and tap on the "Heart" icon to favorite that. Then on pre-order day, you can then go to your favorites and order it from there. If using the Apple Store App it's under "For You"
Right for IUP, But I think OP is buying it outright and with buying it outright on pre-order day is simply just favorite the item and order it as soon as the apple store app opens.
What does everyone advise doing?
Can I leave the Apple Store App open before 8 am EST and wait for the screen to change or do I need to come in and out of the page to refresh until it shows the Pre-order page?

You can't just leave the app open? That's weird. I was wondering the same thing. I was thinking to stay on my favorite phone until the "Add To Bag" button went blue. Sounds like that strategy won't work?
No...I don't think it's ever auto refreshed when the Store comes back up, and I've pre-ordered every single year it's been available. And it doesn't come up at the exact same time for everyone...some people see Store access several minutes before others.
