This may be a silly question, but do the pro models have colors that hold up better based on the color of the stainless steel? Thank you in advance for your help pictures would be great as well!!
 
I’ll do the opposite and say the plain stainless steel will attract finger prints and scratches - but - coming up on two years my iPhone looks a lot better a than the others and mine can be brought back to new with polishing. You don’t do this as truth be told, the stainless looks cool with the weathering of all those micro scratches on there yet smooth to the touch. Same for my stainless AW 5, the scratches add character and look like all my other stainless steel watches like my old stainless steel Rolex.


My plain stainless steel iPhone 12 PM gets taken out regularly for me just to admire the build quality and look of this “brick” and this is the only iPhone I ever did this with. So I say go with plain ol stainless if available. After a year the color wears off the other others starting with the lens surrounds and such. The stainless surface never wears out!

My experience using Pro models is this: the colour on the stainless steel chassis will wear off. I had the Space Grey 11 PM and the chassis had a burnt metal look after more than a year of use without a case.
 
The Green, Blue and Graphite Pro models have PVD coating except the Silver, this model hasn't got PVD coat. (Apple says the silvers has, but is very scratch magnet.) The Gold model has got High Power Impulse Magnetron Sputtering (HiPIMS) process. It's more scratch resistant than the PVD coated Pro models. Only this color has this method.
