I watched some tutorials on YouTube and the Camera Control button reminds me of the Touch Bar on Macbook Pros - I'm not a fan.

Can you not use this button and use the camera just like older iPhone models without any loss in functionality, meaning just navigate via touchscreen controls? Or are some features only available via the new camera control button?

I don’t use the camera button and am taking pictures just fine as they are onscreen too.
Me too. I noticed that the camera control button makes it harder to use because often times it registers my finger as a soft press and I end up messing with the aperture controls. I really don't like it.

you can switch the button off.
