When updating from 26.1 to 26.2 my iPhone 16e became hot. Has anyone else experienced this?

Other than becoming hot, the update process went normally as expected. This is the first time I’ve had a device exhibit this phenomenon.

Interestingly none of my other iPhones or iPads suffered this heating issue when updating from 26.1 to 26.2.

That's normal. The Hardware is doing a lot of work. Work requires energy. Energy creates heat. How hot it gets depends on its ability to dissipate the heat, which varies between models and devices.
