Iphone 3gs 3.1.2 apple stuck logo help

I read some thread here about that but I just want to make things clear first before I recover it.
My iphone is jailbroken to 3.1.2
When I plugged in my iphone to recovery mode and then select "recover" in itunes, it says that recover and update.
Should I click that, I dont want my iphone to be updated yet. What should I do? Please help me step by step, im a newbie here, please bear with me.
And when I do a recovery, will I still get back my videos in my mxtube, and some 3rd party apps?

If your asking that u got alot more research and learning ahead of you In order to restore and rejailbreak your 3GS on anything but the latest 4.0.2
