Iphone 4 Jailbroken 4.01 with Jailbreakme

Have locked Iphone 4 jailbroken from Jailbreakme.com to 4.01
what is the easiest way to save my app's and to upgrade to 4.1.
Do I use Itunes? What is the Process with out screwing it up?
I have a Mac. Then how do i jailbreak to 4.1 from 4.01?

Pkgbackup for Cydia apps, and iTunes for the rest of your apps.

backup cydia apps on iphone or macbook? How do i do this stuff?
The process- what do i use to jailbreak? seems to many problems with facetime and error messages after jailbreak? If i remove my sim card i will get the dreaded sim error message and it will not go away. So anyway to do all of this without removing my sim card?
