I've been having this problem for the last month as of today. My last backup is stated as August 16, 2012 (before I cleared all iPhone backups). I really would like to still be able to keep all of my previous data, should something go wrong with my iPhone 4S, or whenever I upgrade to the iPhone 5 in about 2 weeks to a month from today.

It all started when I removed about 1.5K photos from my camera roll, I noticed the problem while trying to sync my iPhone, and it was stuck on step 2 of 7, which is, backing up.

I've tried these possible solutions already, all with no luck:
-Hard resets to the phone (several times)
-SMC reset on my iMac
-Reinstalling iTunes (rerunning the installer while iTunes still exists on the Mac)
-Cleared "/var/db/lockdown"
-Deleted ALL previous iPhone backups to the iMac
-Using a different admin account


It's basically stuck doing this, causing the phone to reboot SEVERAL times an hour.

To be more clear, I am using iTunes 10.6.3 (25), and OS X ML 10.8.1. Both totally up-to-date.

On iTunes or Mac OS X?

Supposedly, iTunes is fully up-to-date.

I'm running OS X 10.8.1 right now.

EDIT: Okay, I see what you're saying. For some reason, my iTunes isn't showing 10.7, so I'm getting it from apple.com, I'll report back after I download!

Unfortunately, the new iTunes did no fixes to help my problem. I'm not sure if my phone is corrupted, itself, or not.
 
Do you backup to iCloud?

Not currently. For the past 3 years I've owned any Apple product requiring an iTunes sync, it's always been through the computer. I was thinking about buying 10-15 GB of storage and starting iCloud, however.
