I'm using my iPhone 5 on my school's network and it works fine. But each time I power up the phone I need to go into settings and select the network for it to use it.

I want it to use WiFi by default over cellular data. Is this something to do with the network or does it relate to iOS?
 
Your school's network is probably set up so you are forced to sign in every time. A lot of public/guest networks are set up like that so people are not connected all of the time.

I've been on networks that kick you off after an hour and don't automatically re-connect.

My Android didn't have that problem staying connected to it.
