So i just started to think, would having a case interrupt NFC from working. ex. Apple Pay

Yeah, that's why Apple is selling cases for the phone.

What a dumb question.

Well if you compare Apples cases to any other vendors you would notices Apples is a lot thinner.. Just a question since other ppl have cases on their NFC phones...

My otterbox is very thick, as it's intended to protect my 5S against falls. Logic and common sense should tell you unless a case is made of lead, NFC will work just fine.
