I migrated from a 4S to a new 6 S that I setup using my 4S backup.

So I now have a 6s backup on my iTunes.

After a week I decided I did not like the 6s and returned it to Apple.

I am now going to buy a 5S.

My question is

Will I be able to set up my new 5S using my previous 6s backup?

I know this is a strange situation and I can't find any information about this on the Internet

Yes, you will be able to restore your 5S from the backup of your 6S. When attempt to restore from the backup you will receive a message telling you if you need to update the iOS version first before the restore can continue. I don't think you'll have any trouble, though.
