Any chance that anyone has had success with breaking an iPhone to work with US Cellular? Is this even possible?

Only ATT and T-Mobile can work with the iPhone 3G in the USA if you unlock it using rebel sim or simfree.
 
Only provider with GSM that i know of in the USA is ATT and T-Mobile, who the hell is Centennial??? LOL never heard of them.

There are plenty of regional GSM providers. Einstein, Cellular One (in some markets CDMA is used), Centennial, Alaska, etc. For a complete list, look here

To answer the original question, as long as you have a SIM card, you would be able to use an unlocked iPhone. Some of the data settings may need some additional set-up, however.
