Whenever I drive past an optimum wifi hotspot, my iPhone 6 (like my old 5s) will switch from LTE to wifi and then back to LTE, usually causing whatever I'm streaming to stop for a moment or two. I thought their new chips were supposed to know when you were driving and not do that. Do I have a setting set wrong? I don't always remember to shut off wifi.

That's an issue I have as well. When traveling along hotspot routes I turn off wifi.
 
Mine is also set to only join known networks but optimum hot spots are a known network. I try and shut wifi off when I drive. Just curious why this feature doesn't seem to work properly.
 
I know that the M8 works with the gyroscope to detect when you're driving but I haven't seen any documentation regarding that ability and wifi connections.

If you are jailbroken and use bluetooth in the car you could have an Activator action to disable wifi when your car bluetooth connects and vice-versa.

I have not heard of this being a "feature", and even so if you are stopped at a stop light it may think you aren't driving and would then connect. The easiest solution is to simply turn off WiFi when you aren't at a known WiFi hotspot to prevent this.
