Hi,

Lets say that my iPhone is not yet encrypted with a screen lock PIN and decide to restore all my data onto the phone.
So after my data has been restored and then I enable iPhone encryption using a screen lock PIN, will that data still be encrypted?
Or, should encryption be enabled BEFORE restoring data onto the phone to avoid data leakage?

Not sure what you mean by encryption?
If you put a passcode lock on your device then no one will be able to get access to the phone to view or connect and take any of your data.
You dont need to restore it to enable a passcode, you can do it at any time and you'd be secured.
Don't confuse encrypted or encryption with a pin passcode.

I know that Android has the ability to encrypt the phone.

This from the iOS Deployment Manual (for IT administrators):
iOS devices use hardware encryption. Hardware encryption uses 256-bit AES to protect all data on the device. Encryption is always enabled, and cannot be disabled. Additionally, data backed up in iTunes to a user’s computer can be encrypted. This can be enabled by the user, or enforced by using device restriction settings in configuration profiles.

Further, Apple services (iMessage, FaceTime, iCloud, etc.) are also encrypted. Here's an article that describes iCloud encryption: https://support.apple.com/HT202303

The data on your iPhone is always encrypted, regardless of whether or not you use a screen lock PIN.
