I've trawled these forums but am getting increasingly confused.

The iPhone specs say "3.5-mm stereo headphone minijack" but am I right in thinking that third-party (Sony, for example) headphones don't fit it?

The entry hole is pretty deep, so only jacks that are very long can fit.

Edit : that just sounds 'not right'. Still, it's valid.

i've seen some that will, some that won't

a 3.5mm or a 1/8" jack is the standard headphone jack and most everything.. laptops, desktops, ipods, etc..

the only issue as previously stated is that is it slightly recessed in the metal case of the phone for (i think) appearance.

some third party headphones will work totally fine out of the box, some will need the small adapter, which just extends the jack enough to be used.
