does anyone know if there is something that you can download that let's ou sync you iPhone with iTunes via Bluetooth or something

No, but however, you can get WifiSync from Cydia and use that to sync. You have to be jailbroken though.

Nothing over Bluetooth. Wi-Fi Sync is available in the Cydia Store for $9.99 and it will wirelessly sync your device.

Yes, you can get it for free as a cracked version, but I won't tell you where

Its on sale for Christmas anyway

There are cracked versions available, but if you're going to use the app, support the developer and buy it.
